Chai Sugar Cookies

Adapted from this recipe (just added chai).

The leaves are already turning bright and whipping along down the wet sidewalks. And Trader Joe's still doesn't have that delicious pumpkin muffin mix they sold last year. I wanted something autumnal -- the cookie equivalent of the Pumpkin Spice Latte. I tried substituting the sugar in a sugar cookie recipe with some of the Trader Joe's chai latte mix that I've had sitting around forever, and they turned out delicious! They taste kind of like a fluffy gingersnap.

Ingredients
2 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup butter, softened
1 cup white sugar
1/2 cup Trader Joe's Spicy Chai Latte mix
1 egg
1 teaspoon vanilla extract

Directions
Preheat oven to 375 degrees F. In a small bowl, stir together flour, baking soda, and baking powder. Set aside.
In a large bowl, cream together the butter, sugar, and chai mix until smooth. Beat in egg and vanilla. Gradually blend in the dry ingredients. Roll rounded teaspoonfuls of dough into balls, and place onto ungreased cookie sheets.
Bake 8 minutes in the preheated oven. Let stand on cookie sheet two minutes before removing to cool on wire racks.
